Later is an adverb that describes the time of an action.
Latter is an adjective that identifies the last of two or more items listed previously.
- We will do our shopping later, after these crowds have thinned.
- The restaurant served shrimp fried and broiled. Susan preferred the latter. [That is, Susan preferred broiled.]
