I've been asked to answer phone calls and help a chef book appointments to cook dinners at various sites. He said he would pay me a percentage for every dinner I book. I'm new and not quite sure how to approach. Any suggestions?
I did a number of phone calls for a client a few years back. There were 450 calls in all. I got a base rate plus a bonus for each appointment I set. It worked out great. It would be a shame if you made all the calls and didn't get one booking, therefore, didn't get any pay for your work. Negotiate a base rate plus a percentage to your client and see what he says. If he is that good of a chef, he will make the money up with the bookings you schedule. Good luck.
When I did my calls, I did hourly. But if you wanted to you could set up a monthly retainer if you know the calls will be ongoing. You just want to make sure you get paid for time worked, so whatever is best for you is what you should propose.
