Do you just create random things? I think it would be different if I were creating graphics/websites/etc., but with administrative tasks... I mean, I guess I could show someone the itinerary I did for a client. He visited 6 countries in 14 days and it was pure chaos!

As far as a portfolio, I just have screenshots of work I created for sample purposes only (with the exception of database screenshots)
The portfolio page really depends on your chosen niche, your services, etc. It may not be one in which you want or need to include in your site.
Oh and to answer you original question...my current site (soon to be updated) has the following sections:
Home
About
Benefits
Services (going to be broken down into a few subpages)
Portfolio
Rates
Contact
Resources
Ethics (I have a link in text, but I am going to make it a choice on my navigation menu).
Testimonials
I honestly think I have too much information

and plan on condensing/combining some pages. The pages that get visited the most by my web site visitors are: Home, About, Services, Rates and Contact.
