I think a lot is fine because you never know who they might forward your email communications to and it is another form of advertising - even if a small amount compared to a website, flyer, etc. I also think that changing it up (varying the font size, style, color) every once in a while will catch people's eye and they might notice something that they hadn't noticed before. If you use outlook set up a different sig for every type of message you send out: new message, reply, forward, new client, potential client, standard client, etc...you can make them all a unique. I have one set that just has my name and nothing else which I use for casual communications.
Now that I've said that I guess I'll answer the question! I use pretty much what has already been posted...name, title, company, email, web, cell but not necessarily in that order! I have recently started using my tag occasionally and want to more...I just need to go in and change my sigs to include it.
