II guess I might have to think outside the square as to where to get some experience. I am thinking of doing some volunteer work at the local hospital. I feel it would be a good skill to have to add to your services.

Try volunteering for non-profit organizations, they may record meetings and appreciate having an offer to transcribe for free.
